Heat oil in a pan and sauté one onion with two garlic cloves until they soften slightly.
Add the tin of sardines along with a little water to break it down into a sauce.
Mix in sweet soy sauce, sugar, and a small amount of salt. Stir briefly.
Do not stir too much when adding 4 eggs; let them cook quickly.
Season with finely chopped onion, red chili, cumin leaves, and sprinkle with lemon juice before serving.
For the puri (puff pastry), use Tisha brand from the store. Thaw it briefly and fry in a lot of hot oil until it puffs up nicely on top.
