Crack and gently beat 3 eggs in a bowl.
Finely chop half an onion and sauté until slightly soft.
Add 2 tablespoons of tom yum paste and stir to combine until well coated.
Add sweet soy sauce, oyster sauce, and a little water. Stir to mix.
If desired, add 3-4 bird's eye chilies for extra heat. Stir in the egg mixture gently.
Cook over low heat until the eggs are cooked through and the sambal is well combined.
