Peel the nipa fruit and cut it into chunks.
Slice the kaffir lime fruits and remove any seeds.
Place the nipa fruit, sugar, and water in a pot and bring to a boil. Let it simmer for about 5 minutes until the fruit is soft and the syrup thickens slightly.
Add the kaffir lime slices and tamarind fruits, then let it cook for another 5 minutes.
Turn off the heat and add the parsley leaves. Let the mixture cool before serving.
