Tumis half a large onion and two cloves of garlic until fragrant.
Add chicken, shrimp, and squid. Cook as usual.
Beat an egg in a bowl and scramble it over the mixture to ensure it's well-cooked before stirring in.
Add red chili, lemongrass, kaffir lime leaves, broccoli florets, carrots, and drained rice. Stir-fry for a moment.
Season with sotong sauce (shrimp paste), sugar, salt, and tomyum paste.
Increase heat, add tomato and some red chili flakes, and stir until well-combined and cooked through.
Serve immediately.
