Chop one large onion, four cloves of garlic, and one inch of ginger.
Add ten dried red chilies that have been chopped finely to the chopping board.
Toast the ground cumin in a pan until it becomes fragrant.
Add the chopped onions, garlic, and ginger into the frying pan with the toasted cumin. Stir-fry until they are lightly browned and aromatic.
Add the cooked meat, salt, sugar, and a little bit of turmeric powder. Cook for about 5 minutes or until well combined.
Add oyster sauce, sweet soy sauce, dark soy sauce, and a little water to the mixture. Stir well to combine.
Slice one large onion (hollandaise onion) and add it to the pan along with chopped red and green chilies. Cook for another 5 minutes or until everything is nicely coated and flavors are well-infused.
Once done, garnish with additional sliced onions if desired.
