Peel and slice 2 potatoes into thin strips, about 1/8 inch thick.
Dry the potato slices with paper towels and press to remove excess moisture.
Place the dried potato strips in a mixing bowl and add 2 tablespoons of cornstarch, salt, and a little oil. Mix until well combined.
Heat the oil in a non-stick pan over medium heat. Add the potato mixture and flatten it into pancakes about 1/4 inch thick.
Cook each side until golden brown, approximately 3-4 minutes per side.
Flip the cooked pancake and place a piece of mozzarella cheese on one edge. Cover with the other half to enclose the cheese within the pancake.
Cook for another minute or until the cheese melts, then serve hot with your preferred sauce.
