Prepare carbonara ramen according to package instructions. You can use any brand you prefer.
Break the eggs into a bowl and beat them with some of the carbonara sauce from the noodles.
In a pan, heat oil and sauté the soy sauce until it's fragrant.
Transfer the cooked soy sauce mixture to one side of the pan. In another part of the pan, crack in the beaten eggs and scramble until they are just set but still slightly runny—like a soft-boiled egg consistency.
Fold the omelette over itself gently to form an oval shape.
Add the carbonara noodles on top of the omelette and sprinkle with shredded cheese.
Top with the sautéed soy sauce and garnish with dried seaweed, mayonnaise drizzles, and a few garlic chips (if desired).
Serve immediately while hot.
