Prepare 400 grams of marinated chicken.
Finely chop the scallions and mince the garlic, then mix them with the minced chicken along with ground white pepper, salt, and a pinch of MSG to taste. Add one egg and stir well until all ingredients are evenly mixed.
In a bowl, add lukewarm water with 1 teaspoon of chicken stock and mix well for dumpling batter.
Arrange the dumpling wrapper layers by placing the marinated chicken on each layer, folding them to form half-moon shapes. Repeat this process until you reach the desired height.
Pour the remaining chicken stock over the top layer, ensuring it reaches the bottom of the dumplings for better flavor penetration.
Steam the dumplings in a steamer basket for 20 minutes or until fully cooked and the wrappers are puffed up.
Once done, garnish with chili oil, sesame seeds, and chopped scallions. Serve immediately.
