Prepare 4 teaspoons of gelatin and soak in 4 tablespoons of warm water.
In a saucepan, combine 1.5 cups of full cream milk with 1.5 cups of whipping cream.
Add 3/4 cup of granulated sugar and mix well.
Heat the mixture until it starts to simmer but do not let it boil.
Add 0.5 cup of dark chocolate, either in chunks or bar form, and stir until melted.
Stir in the prepared gelatin mixture until fully incorporated.
Pour the mixture into molds or small containers for panna cotta.
Chill the panna cotta in the refrigerator for 30 minutes to an hour.
To serve, gently run a knife around the edges of each panna cotta and let it sit in warm water for a few seconds before serving.
